6 cups tomatillos, chopped
2 cups red onions, chopped
1 jalapeno pepper, seeded, chopped (I usually add more because we like spicy salsa!)
6 garlic cloves, chopped
1/2 cup lemon juice
1 1/2 cup diced Roma tomatoes, juice and seeds included
6 Tbs sugar (I left this out half the time)
1 Tbs salt
1 tsp black pepper
Combine all ingredients in a large pot and stir frequently over high heat until mixture boils.
Reduce heat and simmer 20 minutes.
Ladle into pint jars leaving 1/2 inch head space.
Adjust lids, process in a hot water bath for 20 minutes.
