Dough:
2 1/2 c flour
1/2 t salt
1 t sugar
2 1/4 t yeast
1 cup very warm water
Topping:
1/2 c warm water
2 T baking soda
Course salt
3 T melted butter
Mix dry ingredients first then add water. Mix until dough is soft and slightly sticky. Add more flour as needed. Knead 5 mins. Put in plastic bag and let rest 30 to 60 minutes. Preheat oven to 500 degrees. Grease two cookie sheets. Transfer dough to lightly greased surface. Cut into 4 strips. Let rest 4 mins. Now mix water and baking soda. Cut dough into bite sized pieces and dip into baking soda solution, stirring each time to remix. Sprinkle with salt and let rest for 10 mins. Bake for 6-8 mins. Bake one sheet at a time. Brush with butter and enjoy!
