1/2 cup chopped onion
1/2 cup butter
3 cups diced cooked chicken
1 cup uncooked rice
2 1/2 cup chicken broth
1 cup drained, chopped, canned tomatoes
salt and pepper to taste
1/4 tsp garlic salt
1/2 tsp ground thyme
1/2 cup chopped pecans (or walnuts)
In a large skillet, saute onion in butter until light brown. Stir in remaining ingredients, except nuts. Cover and simmer 30 minutes stirring occasionally. Stir in nuts before serving.
